Between Knowledge and Flavour

Set in a post-industrial area of Lima, near the Yerbateros slaughterhouse and fruit market, this project addresses malnutrition in Peru— not as a problem of scarcity, but of misinformation and poor eating habits. It proposes Between Knowledge and Flavour: a gastronomy school that teaches through space, experience, and the senses, rather than theory alone.

Two academic blocks are linked by a generous central space—a dynamic core for exhibitions, rest, and interaction. In contrast to conventional educational buildings organised around corridors and enclosed classrooms, this spatial arrangement prioritises user wellbeing, comfort, and connection.

Public plazas surrounding the school host gastronomic fairs and street food, reinforcing food as a cultural and communal act. Edible gardens and open-air learning spaces are part of the educational programme, allowing students to engage directly with food cycles— growing, harvesting, preparing, and tasting.

This is a school that teaches not only with words, but through participation and the body. It grows knowledge from the ground up—an architectural response to urban inequality, aiming to reconnect citizens with food, territory, and each other.
